We are trying to eat more beans in our diet because they are healthy and cooked correctly they can be delicious.  I like using dried beans because they are super cheap and keep well in the pantry until I am ready to use them, which means I don’t have to plan too far ahead.

I also find this recipe super simple on a busy day.  Many foods don’t really taste great after being cooked in a crockpot, but I have found that I really like beans this way.  I find that doing most of the prep work the night before is really important for this recipe because I am not a morning person at all.

I am also excited about this recipe because it can be, emphasize on “can be” made to be casein-free.  Casein is one of the proteins in milk.  I have always loved milk and everything dairy and frequently include it in my cooking.   Unfortunately, last month my three-year-old, Little Miss, was diagnosed with a casein allergy, so we are now on a journey to figure out meals that everyone in the family enjoys that are casein-free.  As I am still very new to this journey, please do your own research and read your labels if you are trying to make casein-free food.  I am using this to document our journey and to keep myself accountable.


Recipe

Ingredients

  • 1 lbs chorizo (check the label or manufacturer’s website for casein information)
  • 1 lbs dried beans (mixed)
  • 2 medium sweet onions
  • 4 cloves garlic
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 bay leaves
  • salt and pepper to taste
  • 1 box chicken broth

Instructions

Evening Before

  1. Slice onions into thin pieces.  Peel garlic.
  2. If you have time-Brown chorizo on medium-high heat with olive oil.   Add onion and garlic to the same pan cook as the chorizo continues to brown.  Remove from heat.  When cool to touch cut chorizo into bite-size pieces.
  3. Measure spices into a bowl.

Morning

  1. Add ingredient to crock pot cook on low for 8 hours.
  2. Serve when you get home from work or a day out.  It is just that simple.
